I am going to show you how to make the best summer side dish...fried fresh okra from the garden. This pairs perfectly with grilled chicken, hamburger steaks, or pork-chops and a side salad.
Ingredients:
-Fresh okra rinsed & salted
-2 beaten eggs
-Crisco
-1 cup of cornmeal
-1/4 cup of flour
-Salt and Pepper to taste

Directions:
Rinse your okra and salt it.
In a medium bowl, mix corn meal, flour, salt and pepper, and the all purpose seasoning until combined.
Beat eggs in a small bowl.
Dip okra in the egg wash and coat with the batter mix. Shake off excess.
In a cast iron skillet heat Crisco, and add breaded okra. Try not to flip until edges appear crispy.
Once you flip and both sides are crispy, remove from pan and put onto a paper towel lined plate to soak up excess oil.
~If you want to spice up your basic side salad to serve with your meal, you can make my mini wedge salads that we love so much:
Quarter a washed lettuce head, and lay on a serving platter. Drizzle with blue cheese (or ranch salad dressing), fresh ground pepper, chopped tomatoes, fresh crumbled bacon, slivered almonds, crumbled goat cheese (or feta), and a dash of balsamic vinegar. This is a fan favorite side dish in the summer in our home.
