Quick, Easy, Keto!

I'm excited to share a quick and easy dinner recipe with y'all today! My husband and I have been dipping our toes into Keto diet recipes before we make the plunge, so this recipe follows Keto diet rules, but I will be adding modifications to this recipe for those that are not as concerned with being Keto-friendly.




Stuffed Peppers

You will need:

1lb Sausage (any flavor you like)

2 blocks Cream Cheese

1 can Rotel

6 green bell peppers


Optional : Rice, Shredded Cheddar Cheese

Brown the sausage and drain. I like my sausage extra done, but cook it to your preference. 

Add sausage back to skillet on stovetop and add 2 blocks cream cheese. Mix and heat.

Add one can of Rotel (do NOT drain) and mix well.

Wash and Cut 6 green bell peppers and clean out centers. Spoon in the sausage mixture. Bake on a greased cookie sheet at 375 degrees for 30 minutes. 



These are so good and would be amazing with rice added in before baking and sprinkled with some shredded cheddar cheese on top just before they come out of the oven.
