Zucchini Chicken parmigiana

This is another easy, favorite of mine! I can't wait to see you guys recreate it for your families.




  1. Slice zucchini (long length)

  2. Layer in baking dish

  3. Dash salt and Italian seasoning over the zucchini

  4. Layer shredded chicken over zucchini (boiled and shredded or from fresh rotisserie)

  5. Add fresh basil as desired

  6. Add one large can of traditional marinara sauce

  7. Top with 2 cups of mozzarella cheese

  8. Cover with aluminum foil and bake at 375 degrees for 40 minutes or until bubbly and zucchini is tender
