Caribbean jerk fajitas

For my mother's birthday we grilled fajitas, and made a complete taco bar. We have been loving our Blackstone griddle. It is awesome when you are cooking for a large group of people. Caribbean Jerk Fajitas

Ingredients:

-Meat of choice (we used chicken and shrimp)

-onions

-green, red, orange, and yellow peppers

-Old El Paso Caribbean Jerk kit

-canola oil

-limes


Directions:

  1. Chop chicken into small bite size pieces.

  2. Chop peppers and onions into skinny 2 inch long pieces.

  3. Follow directions on Caribbean Jerk kit and coat all ingredients in the seasoning.

  4. Heat up your griddle or pan, I recommend the Blackstone griddle, and lightly coat it with canola oil, and a little bit of lime.

  5. Grill chicken, peppers, and onions until tender.

  6. Add shrimp at the end about 5 minutes before the other ingredients are done.

We made a taco bar with our fajitas. We warmed tortillas and had sour cream, avocado, cilantro, lemons, limes, taco sauce, jalapeños, shredded cheese, tomatoes, and shredded lettuce for toppings. For sides, we had chips and salsa and black beans.
